It sounds like you might have your date field as of type 'text'.

In your list, go to the settings page, and create a new field of type 'date' (or modify your date field). Access will import the data as a date-type field automatically.

After you have created your new field, you will need to re-enter all of your date values into the new date field. You can create a datasheet view of your list to easily go through each record and update the new date field.

If you have lots of items in you list, and it is out of scope to change them all by hand, then you may want to consider creating a calculated field that parses your date-text and makes it into a real date, by making the calculated field return genuine date/time type data.

I hope that helps you.
